Gumbo is a stew or soup of celery, onion, bell peppers, seafood, meat
and spices. Every family has their own recipe and their own method for
making the roux, and no two gumbos are the same. A roux is flour that’s
slowly browned in oil until it turns a dark brown color.
At the Blessing of the Fleet, tasting the gumbo is only half the fun.
It’s fascinating to walk around in the morning, see the cooking methods
of the different teams, and talk to the cooks. Besides the traditional
seafood gumbos, you may find chicken and sausage gumbos, plus more
daring creations. Contestants register today and start planning for the
